The Diabetes Weight-Loss Cookbook: A Life Changing Diet to Prevent and Reverse Type 2 Diabetes – Katie and Giancarlo Caldesi with Jenny Phillips. It is easy to follow, explains some of the theory about the low carb approach and has some great low carb recipes.The “Leek, Spinach a Feta Showstopper” recipe in this book is particularly good.

The 30 Minute Diabetes Cookbook is the most recent low carb cook book from the Caldesis. Also highly recommended!

Books that dig further into the science

The Obesity Code – Dr Jason Fung. This is an excellent book. Dr Fung is a legend in the low carb world and explains the science behind obesity really well. He is also very interested in “intermittent fasting”.

Big Fat Surprise, why butter, meat, and cheese belong in a healthy diet – Nina Teicholz. The title of this book is self explanatory. It challenges the long held historical mainstream view that saturated fat is bad and explains the science behind it.

Eat Rich Live Long. Live Long Mastering the Low-Carb and Keto Spectrum for Weight Loss and Longevity – Ivor Cummins and Jeffrey Gerber. Together they have written a book that is easy to follow and understand about the theory of the low carb diet and getting started.

The Complete Guide to Fasting – Dr Jason Fung. Dr Fung runs a clinic in Canada called IDM. He has achieved some spectacular results helping his patients improve their health and uses time restricted eating / fasting as a tool.
